Berry Omelette Breakfast

Method

2 eggs

1 tsp Vanilla essence

Seasonal fruit – berries, plums, pears

  • Separate the whites from the yolks
  • Whisk the whites until stiff
  • Mix the vanilla essence with the yolks
  • Gently fold the yolks into the whisked whites
  • Melt 1 tsp coconut oil in a small frying pan on a gentle heat
  • Pour the egg mixture into the pan
  • Sprinkle the berries evenly into the eggs
  • Cook on low heat for a few minutes
  • Then put pan under the grill until golden brown and cooked through
  • Serve with yogurt – dairy or non-dairy – coconut yogurt makes a great accompaniment
