Berry Omelette Breakfast
Method
2 eggs
1 tsp Vanilla essence
Seasonal fruit – berries, plums, pears
- Separate the whites from the yolks
- Whisk the whites until stiff
- Mix the vanilla essence with the yolks
- Gently fold the yolks into the whisked whites
- Melt 1 tsp coconut oil in a small frying pan on a gentle heat
- Pour the egg mixture into the pan
- Sprinkle the berries evenly into the eggs
- Cook on low heat for a few minutes
- Then put pan under the grill until golden brown and cooked through
- Serve with yogurt – dairy or non-dairy – coconut yogurt makes a great accompaniment
